Kakheti (wine country)

The eastern valley where Georgia has made wine for some 8,000 years, fermented in clay jars called qvevri and buried in the ground. Sighnaghi, a walled hill town, looks across the vines to the Caucasus.

Kazbegi (the Caucasus)

A mountain town at the end of the Military Highway, officially called Stepantsminda. Above it, the Gergeti Trinity Church sits alone at 2,170 metres, facing the glaciers of Mount Kazbek (5,047 m).

Flavours & local habits

🍽️ Worth tasting

• Khachapuri: bread baked around melted cheese, sometimes with an egg cracked into the middle (the Adjarian boat shape).
• Khinkali: large twisted dumplings full of spiced meat and broth. Hold the top knot, bite, drink the juice, and leave the knot.
• Mtsvadi: skewers of pork or beef grilled over vine cuttings.
• Badrijani: fried aubergine rolled around walnut paste, with fresh herbs and pomegranate seeds.
• Qvevri wine: amber and red wines fermented in buried clay jars, a method UNESCO lists as intangible heritage.

⚠️ Best avoided

• Do not expect a marshrutka to leave on time: it goes when it is full.
• Go easy on homemade wine and chacha, the local grape spirit: toasts at a Georgian table come thick and fast.
• Mountain roads can be slow and rough, and the pass to Kazbegi sometimes closes in snow: leave some slack in the day.
• Carry cash outside Tbilisi and Batumi, where cards are not always taken.
